Another week of incorporating soy into my life and finding that it isn’t as hard as I thought it would be—cold cereal, smoothies, oatmeal, mashed potatoes and scrambled tofu. Who knew? Almost every day, I fix myself a soy smoothie because it’s quick and easy. So, I whipped up this very delicious mango-blueberry soy smoothed with a splash of soy milk. Delicious (and easy)! Ingredients
- 1 cup frozen blueberries
- 1 cup mango chunks
- 1 cup plain Greek yogurt
- 1/4 cup vanilla soy milk
Instructions
- Combine all of the ingredients in a blender, and blend at high speed until smooth.
- Pour into glasses and serve immediately.

Simple and easy,just how I like it! I make both blueberry and mango smoothies a ton, especially now that my mangos are almost ripe!
