My favorite season continues – picking season! And, my tomatoes continue to abound. That’s why I was psyched when Heidi suggested I try this recipe. It was a chance to marry two of my favorite foods – tomatoes and cottage cheese. Simple right? And, the perfecto snack for a woman in her 40’s who was just diagnosed with insulin resistance. I’ve been concentrating on eating a low gylcemic diet and this snack helped me a lot this past week. You can only eat so much cheese and chicken. The other great thing about this combo is you can change it up by adding a variety of toppings – and, you can mix and match. Paprika, pepper, oregano, basil and diced sweet peppers are a few of my favs.
Simple! Get snacking!
