I think Thai food is my most favorite food on the planet. No, I know it is. We love this little Thai food place on the corner and most likely Eric and I are their best customers. They joke we should be family. Its just our go-to place when we are too tired to cook. All Eric needs to do is look at me after a long day and he says its “Thai time.” Yep, usually it is. And I think its Thai time you tired this super-easy Coconut Curry Shrimp.
Made with lightly sweetened coconut milk and mild red curry paste. The shrimp plus the creamy (non-spicy) sauce is served over rice and sprinkled with cilantro. The Asian ingredients (curry paste, fish sauce and coconut milk) are easily found in the Asian section of your grocery store. Don’t be afraid of fish sauce, it really pumps up the Thai flavor and the bottle will last almost forever in your refrigerator. To save money, buy the fresh shrimp, in a small portion, from your grocery store meat counter.
This meal serves two people for less than $10.00. Once you have all the Asian ingredients in your pantry, make it next time for even less. Heidi
Ingredients
- 1 teaspoon vegetable oil
- 1 bunch green onions, chopped (separate whites and greens)
- 1 tablespoon Thai red curry paste (found in Ethnic grocery aisle)
- 1 clove garlic, minced
- ½ pound uncooked shrimp, peeled with tails offshrimp
- 1 tablespoon fish sauce (found in Ethnic grocery aisle)
- 3/4 c light coconut milk (found in Ethnic grocery aisle)
- 1 teaspoon sugar
- ¼ cup Fresh cilantro, chopped
Instructions
- If you are serving with rice, get that started now. Then...
- Prep the ingredients: Chop and separate the green onion. Peel and wash the shrimp. Chop the cilantro and garlic and set aside.
- Heat the wok or skillet l on medium high heat and sauté the green onions for a minute (white parts only). Then stir in the curry paste and garlic. Now add the shrimp and cook for 3 minutes.
- Now make the sauce: Stir in the fish sauce, coconut milk, sugar and the remainder of the green onion and heat thoroughly. Turn off the heat after a minute and sprinkle with fresh cilantro.
- Serve over hot rice for a tasty, filling meal!
