Last year my son Ryan asked me what to do with bulgur wheat. He had purchased a 5- pound bag of bulgur wheat at a local farmers market near his college campus in Santa Cruz and he didn’t know what to do with it. He just needed a little inspiration. All I have to say is…Thank God, the bulgur wheat trumped the Top Ramen!
I’m a huge fan of bulgur wheat because it fits right into the healthy, Mediterranean style of eating that I love and promote. Plus, this whole grain provides the perfect ingredient to begin a healthier meal and a great base to work from because it cooks quickly and is awesome in recipes as a meat replacement.
Yep, you heard me—meat replacement. Not only because of it’s hearty texture but it also provides protein. Did you know whole grains have protein? Combine it with other ingredients like vegetables, legumes (like garbanzo beans), olive oil and reduced fat feta (are you hungry yet? I am) and will you have a knock out, delicious, meatless meal any Mama would be proud of!
